Blueberry Almond Cake

Blueberry Almond Cake Recipe


Serves 8

Ingredients 
  • 4 eggs
  • 220g caster sugar
  • 1 teaspoon vanilla extract
  • 150g self-raising flour
  • 150g butter, melted
  • 120g ground almonds
  • 250g blueberries icing sugar, for dusting

How to make 
  1. Preheat oven to 160°C/gas mark 3. Whisk the eggs, sugar and vanilla in the bowl of an electric mixer for 8-10 minutes until thick, pale and tripled in volume. Sift the flourover the mixture and fold through. Fold through the butter and almonds.
  2. Pour the mixture into a 20x30x 4cm deep baking tray lined with non-stick baking paper and top with the blueberries. Bake for 30-35 minutes or until cooked when tested with a skewer. Turn out onto a wire rack to cool. Dust with icing sugar and slice to serve.
